Our Core

The foundations of Ti Trin Ned

Michael Nørtoft is the co-owner and head chef. He is a passionate chef who has dedicated his entire career to refining his gastronomic craft. His journey has taken him past Restaurant Lieffroy, Ti Trin Ned as Assistant Chef, Formel B as Head Chef, and the three-star Michelin restaurant Geranium as Sous Chef.

With his passion for gastronomy, Michael has been part of the national culinary team since 2016 and was later named team captain in 2023. In the same year, he won the prestigious title of Nordic Chef of the Year. His deep love of classic French flavours, combined with a light and simple expression in his dishes, makes his food both flavourful and visually elegant.

Lærke, co-owner and Operational Manager of the restaurant has a deep passion for creating unique and memorable experiences that go far beyond the expected. With over 12 years of experience in the service industry, she strives to make every guest a part of something special. Her love for testing new ideas and pushing the boundaries of what generally is perceived as possible makes her a driving force behind the restaurant's constant evolution. She loves to create a space where guests don't just have dinner but an experience that stays with
them long after their visit.

Our Core

Building a strong team requires mutual respect and understanding, where every member feels seen and valued. It's where ideas flourish, and the impossible becomes a reality.

The value is not just in the results but in the journey - in the collaboration, the learning and the bonds that bring people closer together. A team is the heart. That's why the people at Ten Steps Down are more than just a team.

They are at the heart of the journey, the experience and the success
